    Default Oven Thermometer Needed...

Just wondering who's coming down withing the next month or so. I'm in the market for an oven thermometer with a range of 200 to 1000F. I've searched Mga but can't find anything above 550F.

Here's a link to the Culinary Depot that has what I'm looking for, can someone bring it down for me. I'll gladly pay the cost plus beers.

Here's a shot of the progress Roger has made on the oven so far.

He's never built an oven or laid a brick before, so this should be another interesting adventure!

Ya know, I believe in magic and such but for some reason I am missing some looks at some photos for reasons unknown to me? I cannot see the photo of the oven, however, I can clearly see the thermometer. Now, would someone tell me the trick?

The oven is progressing slowly. My fella's never built a sand castle and I was curious to see how he would deal with the wet sand. My plan had been to drink beer and watch his attempts with a smirk on my face. Before I knew it, I was wrist deep in wet sand and he was sitting back with a beer in his hand.

It's my own d*mn fault, I've been twitching since he started this project. I know how to lay bricks, my fella says it's not women's work. I know how to mix to mortar consistency, my fella says it's not women's work. I know how to work with clay, my fella says...well, you get the idea. Now you understand why I intended to be smirking when it came to playing with wet sand.

It took about 20 minutes, then he promptly decided it was now time for me to "make it pretty". I quickly got lost in memories of sand castle-building on the Jersey shores, even forgot about my cold Toña. Half a dozen times, he said it was good to go, but it had to be perfect. I'm a bit anal that way, kinda obsessive when I'm trying to do a job.

Could've played with that sand dome for another hour perfecting the shape, but my beer was getting warm and the sand was drying out, so I backed off. We covered it with wet newspaper, then a tarp, and it'll get a clay coating mañana.

Wonder if my fella knows how to work clay...???

Magnificent job! So how long does it take to cure before the first pizza goes in?

Roger says 1 month. If he can stay with the project and nothing crazy seriously interrupts it, we're looking at the end of April for the start of pizza parties!

    Describe the operation Mil.

I know how my pig cooker works, I just have to keep a slow fire under the meat.

But I have no idea how this works.

Weeeelllll, you build a fire in it and bring it up to about 800F. As the oven slowly cools, you've got about 12 to 14 hours of cooking time at varying ranges of degrees. The inside wall is about 4" thick (made of mostly clay, a bit of lime and a tad cement), the brick wall is 6" thick, the final wall will be 3" thick (mostly brosas with just enough cement to hold them together).

The plan is to have the oven hot pretty much all of the time, that way there won't be a long delay to get the oven ready. A small fire (one or two pieces of wood) in the morn should get the oven to temp for the day's cooking in a matter of 30 minutes or less.

It's gonna take some getting used to this style of cooking, but that's the fun part! It's too close to rainy season to get a roof built over it before the rains come, but we hope to have the neighbor help us build something rustic to keep the weather off it full time before long, quizás.

Neighbors are now stopping and staring at it instead of just glancing as they walk by. Folks around here are really good about giving us our space, but I can't help but wonder how long until Jacinta asks if she can throw some bread in there!

One of my very first observations upon entry into Nicaragua were two of these humongous ovens down out of El Espino. I understand that they bake those cookies there in these ovens.

An online friend is bringing our thermometer and the oven is pretty much done. Just needs a bit of prettying up by me, then she's ready for full pix. In the meantime, Roger couldn't wait to fire her up, so he butchered me a female duck this morn for tonight's dinner.

Duck breast halves, quickly seared in a cast iron skillet, were then wrapped in bacon and surrounded by homemade sauerkraut, and popped into Roger's creation. I had made corn bread earlier, but a clay plate kept by the door kept the bread nice and warm...oooh, are we gonna have fun with this baby, or what?!?!!!!!

Magnolia and Jacque were very excited at the smells comin' outa' the oven! We made need to put the Catahoulas away when we start cooking, I saw a gleam in Magnolia's eyes that made me a wee bit nervous...

Yep; that glass-eyed hound has plans for that oven cooked duck and they don't seem too much effected by the hot plate. They seem to just suck it off the platter.
