    Default Casares Fishing late 2010

    This was by far,the best fishing outting we've had in the 5+ years I've been fishing out of Casares.
    We landed over 40 fish in 2 days,and had over 240 pounds of fresh mackarel along with a few monster Jacks.
    My brother in law lost a snook that was easily over 40 pounds,and a few roosters as well.

    Some of the SJDS folks say it is great fishing now along the southern Pacific coast as well
    Sometimes I think I understand everything, then I regain consciousness.

    The mackerel is yummy, but what did you do with the jacks?

    I would have smoked them and dried a bit to serve as bocas with friends over beers.

    Actually many want a white meat fish, but Jacks come out well, I know they are a dark meated fish but still fit to eat.

    I used to hate and think jacks were trash fish,until I tasted how they cook them in Nicaragua.

    In Nicaragua they prepare these bloody suckers in Salpicon,and mannnnn they taste delicious.

    One day I will post the Jack Salpicon recipe.

    I gave a bunch of fish to my neighbors.

    In my youth Felix I have thrown so much back in the water thinking it was trash.

    Travelingman cooked one time for all of us Shark Steakes.

    I will never throw anything away any more.

    I caught a young yellow fin Tuna, way the hell in the deep off here and when he went to fixing it up it was dark meat, But he like Mil is a professional Master of the Galley.

    When He got thru with that thing, Uuuu Weee.

    Knock ya socks off.

    You are right, it is all in who does it and what they put on it and right down to the cooking of it..

    I have only had jack in Nicaragua. The crew on the Pelican Eyes prepared some fresh for a group of us that had taken a sailboat ride down the coast from SJdS, and man that was good eatin' (for me). One of the ladies in our group didn't care for it, but to me it was like a very tender steak - cut it with your fork and delicious. When she offered me her portion, I almost spilled the rest of my food moving my plate quickly so she could slide hers onto it!

    Now there is a trick to everything as my ole' Farmer Grandmother would say.

    Till I came here I never had Fish Head Soup.

    Now let me tell ya it is not only nice fixed up right but will make you look a hammock after eating it.

    This is DSB and our brother Gaston from Corn Island, and believe me Gaston at 91 years can cook up a fish head soup that will knock the wind out of you.

    They are having a FDC in the shade on the beach.
