    Based on a cafe by the same name in Madrid.
    Carne al Horno

    Spanish Tortilla

    Peceto al Torno

    Lentil Stew

    Your observation is correct, what you cannot see is the tremendous flavor and while not medium rare was surprisingly tender. One of the regulars at this cafe told me that if you speak to the chef, and he knows you, you can request and get a less well cooked piece of meat.

    Is it a braised ??? If it is, than it should have a lot of flavor and very tender

    I like mine with a little blood in the center and almost sizzled on the outside to a crisp over a HOT fire.
    To be called a "Has Been" I must surmise, is much Greater than to be called a "Nevah Been"... JW...
