As you follow the main road into town towards the beach, Big Wave Daves is in the last block before the beach on the right side. The front of BWDS is blue and yellow.

Had a friend help me out recently, (gracias George!) and today's sausage stuffing went soooo much easier!

That's duck andouille, a spicy Louisiana style sausage, in the background and an Italian in the foreground. The andouille will get smoked for a few hours mañana, but I think I'll leave the italian fresh for grillin'. In fact, I've got Roger startin' me a fire as I type this...I can't wait to throw some on the grill! Both kinds will be available for sale at this weekend's market, por supuesto.

I have always wanted to learn to make my own sausages and was planning on giving it a go once I get there. Now I know who's brain to pick.

Thanks bunches, Genny, it was good seein' you and Bo again, too! I thinly sliced some smoked duck for a breakfast sandwich and was wondering how Bo liked his duck. If you need more yummy stuff, we'll be at the market in Granada next week.

I will post the Granada Finca Market info by Thursday as a post of it's own, under Events. That usually gives all the vendors enough time to get their info to me. But to give you a heads up, the market will be held at Hotel La Bocona on Calle La Libertad, 2 blocks north of the main church in the park, from 10am until noon.

We will have slow smoked, deli-style roast beef this week, but if you want a smoked duck, please pre order by sending me a private message. Smoked duck is sold in packages of 1 breast and one leg quarter, skin on, for 200 cordobas.

We also use duck in other products, ground and seasoned with sesame oil and soy sauce for egg rolls, and ground and seasoned with garlic, thyme and rosemary for hamburgers. Pkg of 4 egg rolls is 125 cords and pkg of 4 one-quarter-pound patties for the grill is 140 cords.

A complete list of items will be included in Thursday's post. Happy eatin', y'all!
