Default Mardi Gras food at Granada Finca Market

Trying to tempt some of y'all Managua residents to mosey on over to Granada this Sunday...so here are some pix...

Jalapeño cheddar cheese biscuits, made with home-rendered lard.

Pulled pork with a tomato-based bbq sauce made with dulce and chardonnay.

Sliced ham, smoked over mango wood.

And in honor of Mardi Gras, which is full of awesome food...

Muffalettas made with our smoked ham, Genoa salami and provolone cheese, plus a side of olive tapenade chock full of garlic.
I will also have shrimp beignets (a savory doughnut full of shrimp and green onions), and lots of smoked chicken, sausage, and shrimp gumbo. Hope to see y'all there! Buen provecho!

Hotel La Bocona on Calle La Libertad, 2 blocks west of the central park. Sunday, Feb 10th from 10am until noon.

Lots of fun at market. Man, those biscuits and beignets flew off the table! Need to make more soon...Roger says so.

No gracias, Tom, that would be like work. As long as it's fun in the kitchen, I'll do it. When it becomes a job...then I'll retire!
