    One pound of corn or cornmeal, one pound of "Dulcie" (that is the cane part that is found in most any local market)... Per gallon of Chicha.. Boil it good fashion and let it cool ovenight till ya can put a charge of yeast in it the next morning, none of it can be too hot for that next stage when ya put the yeast in it. I use one packet of yeast to set it all off.. Then put the WATA from it strained of course in what is called a fermentation Bucket.. I make it in 10 gallon batches because of my friends a coming over.. Seal it and put one of 'em air traps just like making fine Wine and let it set for about a week... Cleanliness is the key so it does not go to Vinegar on ya... This is not a Rocket Fuel recipe.. If ya want that, increase the sugar content to 7 to one and distill it....

    How about that Flan they make from new corn? Consistency of a soft pudding.

    Somone brought over a jar of that for me to try and it was dellicious.

    Add some vanilla, find some way to get it to gel, and you'd have a really unique Creme Brulee.

    I was supposed to get a recipe, but there is a problem: there are no recipes.

    Those thick new corn tortillas with the weird name are really good too. . .warm with some fresh cuajada, ummm, good!
