    it's called "Levanta Muertos" it's even better with Chilotes.
    The one with seas food/7 mares it's called "Vuelve a la vida" Back to life" reffering to how fucked up drunk/hung over you were before you ate the soup

    Me and you BOTH....

    I must admit I as a youth fell into that sterio typed mentality on a few things one was with the sentence "Now What Kind Of TRIPE Is THIS?"

    I ate Hog Chitterlings, sausauge cased in the intestions of the pig, Blood pudding and all the rest of those local Southern dishes that was a natural because every one else did and "Gloryfied" those dishes.

    But when I came to Central America I got invited to a "Mondongo" boil up... Didn't know what it was till after I fell in love with the dish.....

    Funny thing is here Our Brother Mr. Gaston' Halfford who slaughters 1000's of pigs a year all the Maws, Small intestions of his pigs are thrown out for the crows to eat... Nobody here eats them, but the beef Tripe is a delicacy...

    BTW the other day Gaston and I cooked up a pot of Pigs Knuckles and had a few FDC's and I got to talking with him and our conversation went in a direction it never had before in the 21 years I have known him....

    He told mt his Corn Island barn name was Timothy and not Gaston'...

    So I asked how the Gaston' came about.

    Well it seems he was not only a hard worker in his youth and quite the Muhairyago "Womanizer" but always had money to burn on them..... Hence Gaston' in Spanish... NOT Gaston in English.
