    Default A Breakfast Change...

    Variety is the spice of life and my kitchen can get a little boring at times. So this morning I tweaked a Brazilian recipe for a french toast that is usually served at Christmastime. The supply of a hearty, homemade bread and fresh duck eggs really made this one pop!

    4 one inch thick slices of homemade bread
    2 duck eggs
    3 oz condensed milk
    3 t milk
    1/4 tsp vanilla extract
    pinch of salt
    1/4 cup sugar
    1 T cocoa powder
    1/8 tsp cinnamon

    Whisk together eggs, condensed milk, regular milk, vanilla extract, and salt in a shallow bowl.
    Place bread slices into bowl and turn to coat evenly. Cover and let marinate overnight in the fridge.

    Place sugar, cocoa and cinnamon on a plate and mix well. Set aside.

    The next morning, heat about an inch of fresh oil in a cast iron pan over medium high heat.
    Use a spatula to gently lift the bread from the batter and place into hot oil carefully. Allow to fry for 3 to 4 minutes per side or until browned nicely. Fry bread a few pieces at a time, not overcrowding the pan. Remove to a wire rack to drain.

    Sprinkle sugar, cocoa, cinnamon mix generously over both sides of still warm bread and serve immediately with a big cup of hot Nicaraguan coffee...buen provecho!

    Yeah, I really should get around to making cinnamon rolls again, it's been awhile. I have a lot of gardening to do today and Roger had to take a bus into town to work on getting the Honda fixed (universal joint broke on our way to the airport yesterday to meet with Marlies), so I knew something hearty was in order. No telling how long Roger will be stuck in town!

    The last 2 ducks were processed into sausage (something I'm working on as another product for sale) and they made a nice addition to a breakfast sandwich to get us both going. I've been too lazy to make my own bread for a week now, so it was Bimbo or nothing. Duck sausage (sage n' onion) breakfast patties, over easy duck eggs, bacon, tomatoes and lettuce, plus a quick warm tater salad with lots of culantro and garlic grass, and several cups of San Sebastian dark roast por supuesto...and now there's no more delaying those chores.

    Josh and family are coming to visit soon and I've got a whole mess of work to be done to make this place pretty. Why is it that weeds are the things I grow best???
